Strawberry Coconut Almond Smoothie

Ingredients: 8-10 Small frozen strawberries. 3 Fresh strawberries. 1 cup (250 ml) Coconut milk. 1 tsp Almond butter. Optional: Drop of Natural honey. Instructions: Add ice if you prefer and blend all ingredients together. Garnish with coconut shavings and fresh strawberries.

Basil Pesto

Ingredients: 2-3 bunches fresh basil leaves 1/4 cup walnut pieces 1/4 cup Danish feta cheese 3 tablespoons extra virgin olive oil 2 tablespoons water 1 large clove garlic, quartered 1/2 teaspoon celtic sea salt 1/2 teaspoon freshly ground pepper Instructions: Blend all ingredients together. Makes 1 Cup.

Fresh Crunchy Coleslaw

Ingredients: 20g Hazelnuts, chopped. 1 ½ cup Shredded red cabbage. 1 cup Shredded savoy cabbage. ¼ Green apple, thinly sliced. ¼ cup Fresh chives, chopped. 1 tbsp Cider vinegar 1 tsp Extra virgin olive oil. 1 tsp Natural honey (optional). Instructions: 1. Preheat oven to 180°C. Spread the hazelnuts on a baking tray. Bake for 5 minutes or until toasted. 2. Place the hazelnuts, combined cabbage, apple and chives in a large bowl. 3. Whisk together the vinegar, oil and honey in a small jug. Season with freshly ground black pepper. 4. Drizzle the salad mix until well combined.
